IT IS AN EFFECTIVE GROWTH INHIBITOR OF CERTAIN BACTERIA WHICH ARE HEAT RESISTANT AND SUEVIVE AT TEMPERATURES ATTAINED DURING THE BACKING PROCESS. IT IS AN EFFECTIVE ANTI- ROPE AGENT AND DOES NOT AFFECT THE FERMENTATION PROCESS, BAKING RESULTS OR TASTE OF THE BREAD. IT IS ALSO USED AS A BUFFER, STABILISER, FIRMING AGENT, LEAVENING AGENT, CALCIUM FORTIFICATION. CALCIUM ACETATE IS USED IN THE PRODUCTION OF LUBRICANTS, CARBON BLACK AND RESINS FOR PRINTING INK, IN CALCIUM SOAP MANUFACTURE, IN WATER TREATMENT, AS A CONCRETE ACCELERATOR AND AS A PVC FOAM BLOWING AGENT. |
